Mark Gurney and Matt Bushnell, who built Levan and Bar Levan in Peckham, swap south London for a Grade II-listed room on Maiden Lane. The food channels a Parisian bistro rather than a fine-dining playbook, built around low-intervention wines and plates meant to be shared without ceremony. It's a different register for the pair, and a welcome one.
