Jay Patel and Roland Horne, joined by baker Jack Ellingham, take over the old Dobson's Bakery and build a pizzeria around a flour mill imported from Montpellier. Pan pizzas get a centimetre-thick base from heritage grains milled on site, topped with things like Bermondsey Butchery fennel sausage and Calabrian chilli honey. The rooftop terrace is the kind of view Bermondsey Street doesn't usually offer.
