Aktar Islam has two Michelin stars at Opheem in Birmingham. He's earned his London debut too. Oudh 1722 is built around dum pukht: meats sealed under pastry lids, slow-cooked for hours until they give. The Wiltshire lamb shoulder baked in a lamb-fat crust is already being talked about. A long time coming, and a very good place to start.
